These air fryer beef gyros are super easy to make and you’ll have a delicious meal on the table in 20 minutes.
This is a great recipe that uses a quick and easy, homemade tzatziki sauce. So the next time you need a healthy, homemade meal in a hurry, give this a try!
Traditional Gyros
Traditional gyro meat is typically made of lamb, chicken or a combination of lamb and beef. The meat is well seasoned with herbs and spices.
Ground beef Gyros are best made as meatballs. Form whatever combination of ground meat you want to use, into meatballs and air fry them that way. Making scrambled ground meat is not recommended.
Tips For The Best Beef Gyros
- Cut the beef into thin slices for easier cooking.
- Don’t be shy with the cucumber yogurt sauce. It adds wonderful flavor!
- Make sure your beef is seasoned heavily enough for you. You can always add more seasoning if needed. You want to end up with super flavorful beef before assembling your gyros.
- Always use a soft pita. They are easier to use for gyros.
Steak Gyros
You can use flank steak if you slice it very thin. Ask the butcher to slice it for you to make life easier.
Greek Seasoning
Greek seasoning is easily found in many grocery stores in the spice aisle. And if you are feeling adventurous, it’s actually pretty easy to make your own. There are tons of recipes found with a quick google search!
Creamy Tzatziki Sauce
What is Tzatziki sauce? It’s a fresh, salted yogurt and cucumber dip that pairs well with many Mediterranean dishes. And we promise, the name makes it sound way more complicated than it is. A quick blend of a few, simple ingredients in a blender or food processor, and you have instant, homemade Tzatziki sauce!
You can also serve some extra sauce in a small bowl for dipping raw veggies sticks into. It’s yummy sauce. This is our favorite recipe for it!

Gyro Ingredients
1 lb. shaved steak – You can also use ground beef if you form it into meatballs.
1 tbsp. oil – The most traditional choice here is olive oil. But you can use whatever oil you normally cook with.
2 tbsp. Greek seasoning – Store bought or homemade.
½ large raw white onion – Sliced, and seasoned with ¼ tsp. Greek seasoning. Red onion works great too if you prefer it.
3 standard pitas – You can use regular or whole wheat.
Lettuce – This is optional. Layer it on your pita first and then pile everything on top of it.
Tzatziki Sauce
1 medium cucumber – This can be a regular cucumber or an English cucumber. Either will work.
1½ cup Greek yogurt – This should be plain Greek yogurt. You can use full-fat or low-fat. Whichever you prefer.
2 tbsp. minced garlic clove – This should be fresh garlic for the best flavor, but you can also use 2 tsp. garlic granules or garlic powder if that’s all you have available.
2 tsp. fresh, chopped dill – If you only have dry dill, start with 1 tsp. instead. You can always add more to taste if you wish.
¼ tsp. white pepper – Black pepper works too, if that’s what you have.
1 pinch salt – This is optional and should be added to taste.
Optional Toppings & Additions

- Fresh lemon juice
- Fresh olive oil
- Red wine vinegar

How To Make Air Fryer Beef Gyros
In a medium sized bowl, mix together your steak, oil, and Greek seasoning.
Line your air fryer with aluminum foil. This will keep all the yummy juice and seasonings together! Add in your seasoned steak. Cook at 380 degrees for 8-10 minutes depending on how well you done want your steak. If you don’t have a temperature setting, opt for a medium heat or high heat setting.
While this is cooking, prepare your sauce. Peel, and then cut your cucumber in half, long wise, on a large cutting board. With a spoon, remove all of the seeds from the inside. Dice your cucumber into small pieces.
Transfer to a food processor or blender. Blend until you have a puree. Transfer to a dish towel or cheese cloth. Squeeze out all of the moisture as much as possible. Set aside.
In a medium sized bowl, add in all of your sauce ingredients, including the cucumber, but not the salt.
Mix well. Add in a small amount of salt until you reach your preferred saltiness.
Once your steak is done, you can assemble your gyro. You can roll it up or cut the pita in half and stuff your gyro. Add in lettuce first, steak to lay on the lettuce, and your seasoned onion sliced.
Serve with your favorite sides and plenty of napkins or paper towels.
